August seems like such a transitional month for everyone. KIds are outside trying to burn through their last vacation days, acting like it’s the end of the world. I’ve been bumped into by at least 57 moms at the store, all face-down in their brightly colored school-supply lists, anxiously searching for the exact right kind of colored pencils. Everyone is waiting to start something. I feel like no one really enjoys August; we all seem far too busy either waiting for fall to arrive (hey!) or lamenting the inevitable end of summer. the momofuku carrot layer cake + pumpkin ganache.
I was so nervous about making this cake. Nervous, and also psyched. Pretty psyched, actually. It’s my first attempt at a Momofuku Milk Bar cake! And if you think the cookies are a big production, they’re nothing compared to the layer cakes. There are special cake rings and acetate strips to purchase, multiple recipes to complete and let cool, fancy layering and freezing…tons of things. But I’ve almost finished baking the Milk Bar cookies from the book, and I’m moving on, so getting this cake under my belt seemed like the perfect thing to do this past Easter. And so, there was cake. Carrot cake is one of those strange desserts which resists being defined by a particular season or holiday. Sure, some people think, “oh, carrot cake…spring, bunnies, Easter!” but that’s not necessarily true, is it? Carrot cake is just as appropriate in the fall as a spice cake as it is in the spring, or summer, for that matter. How many times have you seen carrot cake at a summer wedding?
