candy egg cookie nests: spring = here!

Hi people! Welcome to spring. I tend to get a little excited about it because it means more produce to work with and more baking projects to explore. This one is a little throwback to a Valentine’s Day recipe I did back in February. Back then, I made “love nests” – brown sugar cookie nests with tiny sugar cookie hearts in the center. Now that it’s spring, the recipe takes even less time to look cute by simply making the sugar cookie nests and a bit of royal icing, and topping them with some egg-shaped candies. I suggest Peanut M&M’s, but you decide for yourself.

Here’s the recipe and step-by-step for the sugar cookie nests and the royal icing. Now go have some pastel candy egg fun. Use the vanilla/water combination for the icing instead of the lemon juice version, please. Or, feel free to use your own recipe for royal icing if you have one you prefer or are more comfortable with. It can be on the looser side since you’re basically using it as glue.

Note: this icing recipe will make a decent amount of icing. You don’t need that much unless you plan to ice other cookies or the hearts. Feel free to do what I did and cut the recipe in half.
